Can there be “too much of a good thing?”
Well, of course not, if you’re thinking about peace or love or chocolate.
But sometimes a good thing comes flooding in all at once, and pretty soon a good thing becomes a pain in the neck that you foist upon your neighbors.
Yup, I’m talking about zucchini!
(You’re so smart.)
Here’s one thing you can do: Use thinly sliced zucchini as a pizza topping!
In my last post, I showed you how to make pizza crust on the grill, so refer to that for the recipe. Toppings can be anything. Here’s what I did for mine.
The recipe calls for toppings placed on the pizza just after the first flip and just before the final few minutes of cooking.
I lined up all my toppings, thinly sliced white onions, zucchini and summer squash, along with minced garlic, basil leaves and pizza sauce before I even began grilling, which takes only a few minutes in total.
Note: Shredded zucchini is terrific too!
Garden to table. Just like that!
